Ingredients

  • 930-950 g 8 All-purpose Flour

  • 600 g 2 1/2 cup Lukewarm Water

  • 4 tbsp 4 tbsp Olive Oil

  • 1 tsp 1 tsp Salt

  • 1 tbsp 1 tbsp Vinegar

  • 7 g 2 1/4 tsp Dry Yeast

  • Olive oil for coating

  • Filling of your choice

How to make pie dough

  • In a large bowl add the water, yeast, flour, salt, vinegar, and olive oil.
  • Mix and knead until all the ingredients are combined. The dough should be soft and slightly sticky.
  • Lightly oil the work surface and transfer the dough onto it.
  • Divide the dough into about 10 pieces of roughly 160 g each.
  • Shape each piece into an elongated dough log.
  • Pour olive oil into a baking tray and dip each dough piece into the oil.
  • Cover the tray with plastic wrap and let the dough rest for 20 minutes.
  • Oil your work surface again.
  • Stretch each piece of dough using your fingers, gently pressing and spreading it outward.
  • Add your filling of choice and roll the dough into a log.
  • Grease a baking tray with olive oil and place the filled dough rolls inside.
  • Brush the surface with olive oil, lightly sprinkle with water, and optionally add sesame seeds.
  • Bake in a preheated oven at 390°F (200°C), conventional heat, for about 60 minutes, until golden.
