Ingredients

  • 600 ml 2 1/2 cup Heavy Cream

  • 2 tbsp 2 tbsp Lemon Juice

How to make Mascarpone Cream Cheese

  • Pour the heavy cream into a saucepan and place over medium heat.
  • Bring to a gentle boil while stirring continuously.
  • Once it starts boiling, continue cooking for 1 minute.
  • Turn off the heat.
  • Add the first tablespoon of lemon juice and stir.
  • Add the second tablespoon and stir again.
  • Let the mixture cool for 15โ€“30 minutes.
  • Straining
  • Place a strainer over a bowl and line it with two layers of cheesecloth (or clean kitchen cloth).
  • Pour the mixture into the cloth.
  • Transfer to the refrigerator for at least 4 hours to fully chill and drain.
  • Once thickened, transfer to a container and store refrigerated.
