Soft and easy Greek feta cheese breads made without yeast. These quick savory breads are filled with feta and melting cheese, shaped into triangles, and baked until golden.

Ingredients

  • 600 g 5 cup All-purpose Flour

  • 250 g 1 cup Milk

  • 3 3 Small Eggs (or 2 large)

  • 100 ml 1/3 Corn Oil

  • 200 g 3/4 Plain Yogurt

  • 1 tsp 1 Smoked Paprika

  • Salt and Pepper, to taste

  • 1 tbsp 1 Vinegar

  • 1/2 tsp 1/2 tsp Dried Thyme or Oregano

  • 14 g 1 tbsp Baking Powder

  • 300-400 g 10 – 14 oz oz Feta Cheese, crumbled

  • 200 g 7 oz Grated Melting Cheese

  • Extra Flour for the work surface

  • For the topping
  • 1 1 Egg

  • 30 ml 2 Water

  • Sesame seeds

Recipe directions

  • Prepare the Dough
  • Crack the eggs into a large bowl.
  • Add the milk, yogurt, and corn oil.
  • Whisk until combined.
  • Add the thyme or oregano, black pepper, salt, smoked paprika, and vinegar.
  • Mix again.
  • In a separate bowl, combine the flour and baking powder.
  • Gradually add the dry ingredients to the wet ingredients.
  • Add the grated melting cheese and mix until evenly incorporated.
  • Add the crumbled feta and gently work it into the dough.
  • Let the dough rest for 10 minutes.
  • Shape the Cheese Breads
  • Transfer the dough to a lightly floured work surface.
  • Knead it briefly, using only enough extra flour to prevent sticking.
  • Divide the dough into two equal portions.
  • Shape each portion into a thick log.
  • Cut the logs diagonally into approximately 20 triangular pieces.
  • Press each piece gently to flatten it slightly.
  • Arrange the pieces on a baking tray lined with parchment paper.
  • Add the Topping
  • Beat the egg with the water.
  • Brush the tops of the cheese breads with the egg wash.
  • Sprinkle with sesame seeds.
  • Bake
  • Bake in a preheated oven at 350°F (180°C) using conventional top and bottom heat for approximately 30 minutes.
  • Remove them from the oven when they are evenly risen and golden brown.
  • Allow them to cool slightly before serving.
