Ingredients

  • For the Filo
  • 1 package 1 package Filo Pastry

  • 120 g 1/2 cup Olive oil

  • For the Potatoes
  • 1 kg 2.2 lb Potatoes

  • 2 liters 8 1/2 cup Water

  • 1 tbsp 1 tbsp Salt

  • Remaining Filling Ingredients
  • 5 5 Spring Onions

  • 1 1 Large Sweet Red Pepper, diced

  • 100 g 7 tbsp Butter or Margarine

  • 6 sprigs 6 sprigs Dill, chopped

  • 1/2 bunch 1/2 bunch Parsley, chopped

  • Salt, to taste

  • Pepper, to taste

  • 1 tbsp 1 tbsp Smoked Paprika

  • 1 pinch 1 pinch Thyme

  • 2 tbsp 2 tbsp Cornstarch

How to make Potato Pies

  • Prepare the Potatoes
  • Peel the potatoes and cut into chunks.
  • Bring 2 liters of water and 1 tbsp salt to a boil.
  • Add the potatoes and boil for about 30 minutes until fork tender.
  • Transfer to a bowl and mash well.
  • Add the butter and mix.
  • Prepare the Filling
  • Heat a little oil in a pan.
  • Add the peppers and spring onions.
  • Sauté for about 5 minutes until softened.
  • Add them to the mashed potatoes.
  • Add dill, parsley, thyme, smoked paprika, cornstarch, salt & pepper.
  • Mix well.
  • Assemble the Pies
  • Lightly oil a 25×37 cm (10×15 inch) baking tray.
  • Take one sheet of filo pastry and lightly brush with oil.
  • Fold it in half.
  • Place some filling at one end and roll into a log shape.
  • Place in the tray.
  • Repeat with the remaining filo and filling.
  • Brush the tops with oil and lightly spray or sprinkle with water.
  • Baking
  • Bake in a preheated oven at 160°C / 320°F (conventional heat), middle rack, for 60–70 minutes until deeply golden and crispy.
