Ingredients

  • For the Cookies
  • 200 g 7 oz Olive oil

  • 300 g 10.6 oz Corn oil

  • 300 g 10.6 oz Honey

  • 200 g 7 oz Orange juice

  • 80 g 2.8 oz Cognac or Brandy

  • Zest of 2 oranges

  • 1000 g 2 lb All purpose flour

  • 200 g 7 oz Fine Semolina

  • 20 g 0.7 oz Baking powder

  • 10 g 0.4 oz Baking soda

  • 2 g 0.1 oz Ground clove

  • 10 g 0.4 oz Ground cinnamon

  • 1 pinch 1 pinch Salt

  • 150 g 5.3 oz Walnuts, crushed

  • For the Syrup
  • 1500 g 3 lb Honey

  • 350 g 12.3 oz Water

  • Peels of one orange

  • 2 2 Cinnamon sticks

  • Juice of half a lemon

Recipe directions

  • Making the Syrup
  • Place a pot over heat. Add water, cinnamon sticks, orange peels, and lemon juice. Bring to a boil.
  • Turn off the heat, then add the honey and stir well.
  • Set the syrup aside to cool.
  • Making the Melomakarona
  • In a big bowl add the corn oil, olive oil, honey, a pinch of salt and stir.
  • Add the cognac (or brandy) and stir. Add the ground clove, ground cinnamon and stir.
  • Add the orange zest and baking powder.
  • Combine the baking soda with orange juice, then add it to the bowl.
  • Add the fine semolina and stir.
  • Gradually incorporate the flour while mixing. Mix until dough.
  • Set the dough aside for 20 minutes.
  • Shaping the Melomakarona cookies
  • Take a small portion of the dough (about 30 g) and shape it into a cookie.
  • Gently press it into a meshed container to create the pattern.
  • Arrange the cookies on a baking dish lined with parchment paper.
  • Baking the Melomakarona cookies
  • Preheat the oven to 170 C (340 F) and bake for 30 minutes.
  • To assemble
  • Dip the hot cookies into the cold syrup for about 10-15 seconds.
  • Transfer the melomakarona to a rack.
  • Serving the Melomakarona
  • Serve the melomakarona on a large plate. Sprinkle crushed walnuts on top.
