Ingredients

  • For the Syrup
  • 350 g 12 1/3 oz Sugar

  • 350 g 11 5/6 fl oz Water

  • 50 g 1 2/3 fl oz Brandy

  • For the Cake
  • 6 6 eggs

  • 100 g 1/2 cup Sugar

  • 130 g 1 cup Self raising flour

  • 15 g 1/2 oz Baking powder

  • 30 g 1 oz Cocoa powder

  • 1 pinch 1 pinch Salt

  • For the Chocolate Cream
  • 400 g 14 oz Milk chocolate couverture

  • 300 g 1 1/4 Heavy cream 35%

  • For the Whipped Cream
  • 1000 ml 33 3/4 Heavy cream 35%

  • 100 g 5/6 cup Icing sugar

  • For the Chocolate Sauce
  • 400 g 14 oz Milk Chocolate Couverture

  • 250 g 8 3/4 Heavy cream 35%

Recipe directions

  • Making the Syrup
  • In a small pot, add the sugar and water and boil for 1 minute.
  • Add the brandy and boil for 1 more minute. Then set aside to cool.
  • Making the Cake
  • In the mixer’s bowl add the eggs, sugar and beat until cream.
  • Add the self raising flour, baking powder, cocoa powder and salt by sifting.
  • Stir.
  • Pour the mixture in a pan with parchment paper and spread it.
  • Preheat the oven at 355 F (180 C) and bake on air for 15 minutes.
  • Making the Chocolate Cream
  • In a bowl add the chocolate couverture and heavy cream (heated).
  • Stir until melted chocolate.
  • For the Whipped Cream
  • In the mixer’s bowl, add the heavy cream and beat until whipped cream.
  • Save 10.6 oz (300 g) of the whipped cream for the decoration.
  • Pour the rest of the whipped cream in a bowl.
  • Pour the chocolate in portions and stir.
  • Refrigerate.
  • For the Chocolate Sauce
  • In a pot add the heavy cream (heated) and the chocolate couverture, chopped and stir until melted chocolate.
  • To assemble
  • Cut the cake into pieces.
  • Place the cake at the bottom of a cup or mold.
  • Pour some syrup on the cake.
  • Add a layer of the chocolate cream.
  • Add some homemade caramel (optional).

  • Add another layer of the chocolate cream.
  • Pour a spoonful of the chocolate sauce.
  • Decorate with whipped cream and a sweet cherry or fig on top.
