Ingredients

  • 1 kg 35 1/4 oz All Purpose Flour

  • 100 g 3 1/2 oz All Purpose Flour (for kneading)

  • 16 g 0.6 oz Dry yeast

  • 20 g 0.7 oz Sugar

  • 20 g 0.7 oz Salt

  • 50 g 1 3/4 oz Olive oil

  • 720 g 25.4 oz Water

Recipe directions

  • In a bowl mix flour, yeast, sugar, salt, water, olive oil.
  • Let the dough rest for at least 40 minutes to rise.
  • Sprinkle the table with flour and knead the dough.
  • Form the dough in a shape to fit in your pot.
  • Preheat the oven at 430 F (220 C) with the empty pot inside the oven. Let the dough rest until the oven, as well as the pot, are well heated.
  • Put the dough in the hot pot and spray some water on it.
  • Add some sesame seeds on top (optional).
  • Carve the dough with a razor or a sharp knife.
  • Put the lid on the pot and bake for about 30-35 minutes at 430 F (220 C).
  • Take off the pot’s lid and bake again at 350 F (180 C) until golden brown (about 30 minutes)
