Moist and fluffy cherry cake made with fresh cherries. A delicious summer treat, perfect with powdered sugar or white chocolate glaze.

Ingredients

  • 400 g 14 oz Fresh Cherries, pitted

  • 200 g 7 oz Plant-based Butter

  • 200 g 7 oz Sugar

  • 4 4 Large Eggs

  • 50 g 1.75 oz Full-fat Greek Yogurt

  • 50 ml 1.7 fl oz Milk

  • Zest of 1 Lemon

  • 1 tsp 1 tsp Vanilla extract or 1 vanillin

  • 400 g 14 oz All-purpose Flour

  • 2 tbsp 2 tbsp Baking Powder

  • 1 pinch 1 pinch Salt

  • For the White Chocolate Glaze (optional)
  • 100 g 3.5 oz White Chocolate

  • 10 ml 0.3 fl oz Vegetable oil

How to make Cherry Cake

  • Preheat oven to 180°C (350°F). Line or grease and flour your cake pan.
  • Sift the flour, baking powder, and salt together.
  • Beat the butter and sugar until light and fluffy. Add eggs one at a time.
  • Add lemon zest and vanilla. Reduce mixer speed.
  • Alternate adding the flour mixture and the yogurt-milk mixture, starting and ending with flour. Mix until smooth.
  • Pour half the batter into the pan. Add half the cherries, then the remaining batter and cherries.
  • Bake for about 45 minutes or until a knife inserted comes out clean. Cool for 10 minutes in the pan before removing.
  • Optional: Pour the white chocolate glaze over the cooled cake or dust with powdered sugar. Serve at room temperature with a scoop of fruit or vanilla ice cream.
