Ingredients

  • 800 g 28 1/5 oz All-purpose flour, sifted

  • 200 g 7 oz Whole wheat flour

  • 200 ml 6 1/6 fl oz Olive oil

  • 200 g 7 oz Active sourdough starter

  • 240 ml 8 1/8 fl oz Orange juice

  • 120 ml 4 fl oz Water (lukewarm) or as needed

  • 1 level tbsp 1 level tbsp Anise seeds

  • 1 tsp 1 tsp Salt

How to make Oil Rusks with Anise Seeds

  • Soak the anise seeds in half a cup of warm water and let them release their aroma for 10 minutes.
  • In a large bowl, mix the sourdough starter, olive oil, orange juice, and the water with the anise seeds (including the seeds).
  • Gradually add the all-purpose flour, whole wheat flour, and salt. Knead until you get a soft, slightly oily dough that does not stick to your hands.
  • Cover the dough and let it rest for 1 hour.
  • Divide the dough into two equal parts and shape into two long loaves. Place them in greased baking pans, cover, and leave to rise in a warm place for 6–8 hours until doubled in size.
  • Score the loaves into slices and preheat the oven to 180°C (356°F). Bake for about 45 minutes until golden brown.
  • Let cool completely, then cut along the scored lines and spread the slices on a baking tray.
  • Bake again at low temperature (100–120°C / 212–248°F) until completely crisp.
  • Let cool and store in an airtight container.
