Ingredients

  • 500 g 17.6 oz Giant Beans

  • 2000 ml 68 fl oz Hot Water

  • 2 2 Onions, chopped

  • 3 3 Sausages, sliced

  • 4 cloves 4 cloves Garlic, chopped

  • 3 3 Carrots, sliced

  • 2 2 Red Peppers, chopped

  • 2 tbsp 2 tbsp Tomato Paste

  • 2 2 Tomatoes, blended

  • 1 tsp 1 tsp Sugar

  • 200 g 7 oz Olive Oil

  • 1/2 bunch 1/2 bunch Parsley, finely chopped

  • Salt & Pepper

  • Paprika

  • Thyme

Recipe directions

  • Soak the beans in a bowl filled with water overnight.
  • Rinse the soaked giant beans thoroughly.
  • In a pot, add 2 liters of hot water and bring the beans to a gentle boil. Simmer for 40 to 60 minutes until the beans are tender.
  • Drain the beans and transfer them to a baking dish.
  • Place a pot over medium heat, add olive oil. Sauté the sliced sausage until lightly browned. Add chopped onion and a pinch of salt; sauté for 1-2 minutes.
  • Add the chopped garlic, sliced carrots, and chopped bell peppers. Sauté until vegetables soften.
  • Stir in blended tomatoes, tomato paste, sugar, pepper, thyme, paprika, and a glass of water. Mix well and let it simmer for 15 minutes.
  • Pour the tomato sauce over the giant beans. Spread it evenly, cover the dish with aluminum foil.
  • Preheat the oven to 200 C (390 F) and bake for 30 minutes.
  • Remove the aluminum foil, sprinkle with finely chopped parsley, and bake for an additional 20 minutes until the top is golden.
