Kourabiedes are traditional Greek cookies made with fresh butter and roasted almonds, delicately flavored with rosewater and coated in powdered sugar. Perfect for festive gatherings or as a sweet gift, these cookies are an irresistible holiday classic.

Ingredients

  • 350 g 12.3 oz Goat Butter (at room temperature)

  • 350 g 12.3 oz Cow Butter (at room temperature)

  • 150 g 5.3 oz Sugar

  • 1 pinch 1 pinch Salt

  • 2 2 Vanillins

  • 1 tsp 1 tsp Baking Soda

  • 1 kg 2.2 lb Soft Flour or All-Purpose Flour

  • 250 g 8.8 Roasted Almonds cut in half

  • For the Coating
  • Rosewater

  • Powdered Sugar

How to make Greek Kourabiedes

  • In the bowl of a stand mixer, add the cow and goat butter (at room temperature), sugar, and a pinch of salt. Beat with the whisk attachment for 7-8 minutes until creamy.
  • At the 3-minute mark, add the vanilla powder and baking soda, and continue beating for another 4 minutes.
  • Switch the mixer attachment from the whisk to the paddle.
  • Mix on low speed while gradually adding the flour.
  • Continue mixing until the ingredients are fully incorporated.
  • Add the roasted almonds (cut in half) and mix on low speed until they are well distributed throughout the dough.
  • Let the dough rest for 20 minutes.
  • Divide the dough into 35-gram pieces.
  • Press each piece gently in your palm and shape it into a ball.
  • Preheat the oven to 170°C (340°F) and bake the cookies for 30-35 minutes using the conventional oven setting.
  • Once baked, allow the Kourabiedes to cool completely.
  • Once cooled, spray each cookie with rosewater and generously dust them with powdered sugar.
