Ingredients

  • For the Dough
  • 600 g 21.2 oz Milk, lukewarm

  • 300 g 10.6 oz Seed oil

  • 3 tbsp 3 tbsp Sugar

  • 1 1/2 tbsp 1 1/2 tbsp Salt

  • 50 g 1.8 oz Fresh yeast

  • 2 2 Egg whites

  • 1100 g 38.8 oz Hard flour

  • For the Coating
  • 2 2 Egg yolks

  • 60 g 2.1 oz Milk

Recipe directions

  • In the mixer’s bowl, we add the sugar, fresh yeast, a bit of milk, and mix.
  • Add 4 tbsp of the flour, mix briefly, and set aside for 10 minutes to activate the yeast.
  • Add the remaining milk, egg whites, seed oil and mix. Add the flour, salt and beat for 5 minutes until dough.
  • Cover with a towel and set aside for 40 minutes for the dough to rise.
  • Transfer the dough on a wooden surface and knead a bit. Divide the dough into pieces weighing 2.8 oz (80 g) to 4.2 oz (120 g) each.
  • Roll out each piece of dough with your hands into a circular shape.
  • On one end of the dough, we add the filling, either savory or sweet, and on the other end, we make vertical cuts.
  • We roll the dough into a cylinder, sealing it well, with the cuts on top. Finally, we twist it a little to make it look like a crescent moon.
  • Place them on a baking tray lined with parchment paper and let them rest for 20 minutes.
  • For the coating
  • In a bowl beat the eggs yolks with the milk. Brush the bagels with the mixture.
  • Baking the turkish bagels.
  • Preheat the oven to 355 F (180 C) and bake for 20-25 minutes.
