Ingredients

  • 6 6 Tortillas (8-inch)

  • 500 g 500 Heavy Cream (cooking cream)

  • 200 g 200 Greek Yogurt

  • 4 4 Egss

  • 40 g 40 Olive Oil

  • 400 g 400 Shredded melting cheese

  • 100 g 100 Shredded melting cheese (for topping)

  • 200 g 200 Ham or Turkey, diced

  • 150 g 150 Bacon (optional), diced

  • 1 can 1 Mushrooms

  • Salt and Pepper, to taste

  • Olive Oil, for greasing the pan

How to make Tortilla Casserole

  • In a bowl, whisk together the yogurt and eggs.
  • Add half of the cream, the 400 g shredded cheese, and the mushrooms. Mix well.
  • Add the ham and bacon and mix again.
  • Season with salt and pepper, add the olive oil, and stir.
  • Roll the tortillas tightly and cut them into thin strips. Add them to the bowl and mix everything together.
  • Grease a 25×37 cm (10×15 inch) baking dish with olive oil. Pour the mixture into the dish and spread evenly.
  • Sprinkle the remaining 100 g shredded cheese on top.
  • Pour the remaining cream evenly over the entire dish.
  • Bake in a preheated oven at 350°F (180°C), conventional heat, for about 45 minutes, until golden and set.
