Ingredients

  • 240 g 1 cup Sunflower Oil

  • 400 g 2 cup Sugar

  • 750 g 3 cup Orange Juice

  • 600 g 4 cup Self-rising flour (or all-purpose + 3 tsp baking powder)

  • 3 tsp 3 tsp Mahlab

  • 2 2 Vanillin Capsules

  • 1 pinch 1 pinch Salt

  • 1 pinch 1 pinch Ground Mastic

  • Zest from 1-2 Oranges

How to make this Vegan Cake

  • In a large bowl, combine the orange juice, orange zest, and sugar. Mix well.
  • Add the sunflower oil, mahlepi, mastiha, vanilla, and salt. Stir to combine.
  • Add the flour and mix thoroughly until fully incorporated.
  • Grease and flour a large 28 cm (11-inch) cake pan.
  • Pour in the batter, spread evenly, and lightly tap the pan on the counter to remove air bubbles.
  • Bake in a preheated oven at 320°F (160°C), conventional heat, for about 70 minutes.
  • Allow the cake to cool for 30 minutes before removing from the pan.
