Ingredients

  • 1 kg Hard flour

  • 50 g Fresh yeast

  • 600 g Water, lukewarm

  • 10 g Salt

  • 20 g Sugar

  • 1/2 tsp Thyme

  • 70 g Seed oil

  • 300 g Sliced olives

  • Sesame seeds to sprinkle

Recipe directions

  • Preparing the Yeast
  • In a bowl add the sugar, yeast and some lukewarm water. Stir to dissolve the yeast.
  • Add 3 tbsp of the flour. Stir and set aside for 10 minutes to activate the yeast.
  • Making the Dough
  • In a big bowl add the rest of the flour, salt, thyme, water, the activated yeast, seed oil and mix until dough. Knead the dough for 5 minutes.
  • Transfer the dough to a bowl. Score a cross on the dough, cover the bowl and set aside for 40 minutes to rise.
  • Knead the dough for 1 minute, then cut it into pieces of 100 grams each.
  • Making the Olive Bread
  • Roll out each piece of dough into a log.
  • Place slices of olives on top of the dough. Roll the dough and seal, covering the olives.
  • Create a loop and pass the dough through it 4 times. Place the dough on a baking dish lined with parchment paper.
  • In a bowl of water mix in a bit of sugar. Brush the dough with the mixture.
  • Add some slices of olives on top of the dough and sprinkle some sesame.
  • Preheat the oven to 180 C (355 F) and bake for 25 minutes.
