Ingredients

  • For the dough
  • 600 g All purpose flour

  • 350 g Water

  • 7 g Salt

  • 30 g Olive oil

  • 10 g Vinegar

  • For the filling
  • 500 g Ground beef

  • 2 Onions, chopped

  • 1 Garlic clove, finely chopped

  • 70 g Olive oil

  • 250 g Semi-soft cheese, grated

  • 15 Cherry tomatoes, cut in half

  • 1 Green pepper, cut into small cubes

  • 1 Red pepper, cut into small cubes

  • 1/2 bunch Parsley, finely chopped

  • Salt and Pepper

  • Sesame seeds for coating

Recipe directions

  • For the Dough
  • In a bowl add the water, olive oil, vinegar, salt, flour and mix until dough
  • Knead the dough a bit and divide it into 6 equal parts.
  • Add some olive oil to a baking dish and dip the pieces of dough into it.
  • Set aside while preparing the filling.
  • For the Filling
  • Place a frying pan with some olive oil over heat.
  • Add the onions, garlic, ground beef and sauté.
  • Transfer the mixture to a bowl.
  • Season with salt and pepper. Add the parsley, red and green peppers, cherry tomatoes and stir.
  • Next, add the cheese and stir.
  • To Assemble
  • Take one piece of dough and roll it out by pressing and stretching it with your hands.
  • The dough should become very thin.
  • Spread some of the filling all over the dough.
  • Carefully roll the dough into a log.
  • Next, roll it into a snail shape.
  • Transfer the dough to a 14 in (35 cm) diameter baking dish, lined with parchment paper.
  • Repeat steps 10 to 13 for the remaining pieces of dough.
  • Brush olive oil on the dough.
  • Sprinkle sesame seeds.
  • Preheat the oven to 390 F (200 C) and bake for 60 minutes.
