Ingredients

  • For the Dough
  • 500 g 500 All-purpose Flour

  • 8 g 8 Dry Yeast

  • 1 tsp 1 Salt

  • 40 g 40 Vegetable Oil

  • 350 g 350 Water (lukewarm)

  • For the Filling
  • 600 g 600 Potatoes

  • 1 1 Large Onion

  • 30 g 30 Olive Oil

  • 2 tbsp 2 Chopped Parsley

  • Salt, Pepper, Smoked Paprika (to taste)

How to make Potato Piroshki

  • Dough Preparation
  • In a bowl, combine yeast, flour, salt, vegetable oil, and water. Mix and knead until a soft, slightly sticky dough forms.
  • Cover and let it rise until doubled in size.
  • Filling Preparation
  • Sautรฉ finely chopped onion in olive oil until softened. Remove from heat, add chopped parsley, and mix.
  • Peel and chop the potatoes, then boil them in salted water for 20-25 minutes until tender. Drain, reserving a small amount of water.
  • Mash the potatoes until smooth, adding a little reserved water for a creamy consistency.
  • Season with salt, pepper, paprika, and stir in the sautรฉed onions and parsley.
  • Assembly
  • Transfer the dough to a floured surface and knead lightly for 1 minute to deflate.
  • Divide into 10 equal pieces. Roll each into an oval shape, place filling in the center, and seal well to form piroshki.
  • Frying
  • Heat vegetable oil in a pan over medium-high heat.
  • Fry 1-2 piroshki at a time until golden brown on all sides.
  • Place on paper towels to absorb excess oil.
