Ingredients

  • 200 g 200 Heavy Cream

  • 200 g 200 Cream Cheese

  • 400 g 400 Feta Cheese, crumbled

  • 200 g 200 Mixed grated cheeses

  • 250 g 250 Butter or Vegetable oil

  • 1 package 1 Phyllo Pastry Sheets (450 g / 1 lb)

  • Sesame Seeds, for topping

  • A little Water, for sprinkling

How to make the Cheese Pie

  • Prepare the filling
  • In a bowl, combine the heavy cream and cream cheese. Mix lightly.
  • Add the crumbled feta and black pepper. Stir gently until incorporated.
  • Assemble the pie
  • Cut the phyllo sheets in half.
  • Grease a 25×35 cm (10×14 inch) baking dish with butter or oil.
  • Layer half of the phyllo sheets into the pan, brushing each sheet with butter or oil.
  • Spread the cheese filling evenly over the phyllo.
  • Sprinkle the grated mixed cheese on top.
  • Fold the edges of the bottom sheets over the filling.
  • Layer the remaining phyllo sheets on top, brushing each with butter or oil.
  • Brush the top generously with butter and refrigerate for 20 minutes to firm up the butter.
  • Bake the pie
  • Score the pie into portions and brush lightly with butter along the cuts.
  • Sprinkle the surface with water, then top with sesame seeds.
  • Bake in a preheated oven at 160°C (320°F), on the lower rack, for 60–70 minutes, until golden and crisp.
