Ingredients

  • For the Syrup
  • 300 g 10.6 oz Sugar

  • 600 g 21.2 oz Water

  • A few drops of lemon juice

  • 50 g 1.8 oz Brandy (optional)

  • For the Chocolate Cream
  • 200 g 7 oz Heavy Cream

  • 100 g 3.5 oz Milk Chocolate

  • 100 g 3.5 oz Dark Chocolate

  • 125 g 4.4 oz Milk Couverture Chocolate

  • For the Whipped Cream (reserve 100g for the decoration)
  • 700 g 24.7 oz Heavy Cream

  • 70 g 2.5 oz Powdered Sugar

  • 1 tsp 1 tsp Vanilla Extract

  • For the Ganache
  • 200 g 7 oz Heavy Cream

  • 100 g 3.5 oz Milk Chocolate

  • 100 g 3.5 oz Dark Chocolate

  • 125 g 4.4 oz Milk Couverture Chocolate

  • Other Ingredients
  • 33 33 Ladyfinger Cookies

  • 150 g 5.3 oz Hazelnuts (roasted and finely ground

  • Cherries and Whipped Cream for decoration

How to Make the Chocolate Roulade

  • For the Syrup
  • Combine all ingredients except the brandy in a pot.
  • Once it starts boiling, let it simmer for 3 minutes. Add the brandy and let it cool completely.
  • For the Chocolate Cream
  • Break the chocolate into small pieces and place it in a bowl.
  • Heat the heavy cream until it reaches a boil and pour it over the chocolate.
  • Wait for 1 minute, then stir until smooth.
  • Whip the heavy cream with the powdered sugar and vanilla until soft peaks form.
  • Gradually fold the whipped cream into the chocolate mixture and refrigerate for 1 hour.
  • To Assemble
  • Dip 30 ladyfinger cookies in the syrup and lay them on a large sheet of parchment paper.
  • Spread the chocolate cream over the cookies, reserving some for the final coating.
  • Add the remaining 3 cookies 5 cm (2 in) inward from the edge to make rolling easier.
  • Roll the dessert using the parchment paper, gently pressing the ends. Wrap tightly and freeze for 3-5 hours.
  • Ganache and Decoration
  • Prepare the ganache by heating the cream and pouring it over the chocolate. Stir until smooth.
  • Coat the frozen roulade with the remaining chocolate cream and sprinkle with roasted hazelnuts.
  • Pour the ganache over the dessert and let it set for 30 minutes.
  • Decorate with cherries and whipped cream.
