Soft and creamy homemade ice cream made without an ice cream maker or condensed milk! Just milk, cream, and simple ingredients for the perfect summer treat.

Ingredients

  • 1000 ml 1000 Whole Milk

  • 150 g 150 Sugar

  • 80 g 80 Cornstarch

  • 500 ml 500 Heavy Cream

  • 1 tsp 1 Vanilla Extract

  • 1 pinch 1 Salt

How to make Soft Vanilla Ice Cream

  • In a pot, combine the milk, sugar, and cornstarch. Stir well.
  • Turn on the heat and stir frequently until the mixture starts to boil.
  • Once it begins to bubble and rise, turn off the heat.
  • Add a pinch of salt and slowly pour in the heavy cream while stirring gently with a spatula.
  • Add the vanilla extract and stir again.
  • Let the mixture cool for about 10 minutes.
  • Transfer it to a bowl and cover with plastic wrap (touching the surface).
  • Freeze for 2–3 hours.
  • Remove from the freezer and beat the mixture in a stand mixer for 3–4 minutes until fluffy.
  • Transfer it back to a bowl, smooth the surface, and remove any air bubbles.
  • Cover again with plastic wrap, making sure it touches the surface.
  • Freeze for at least 8 hours or overnight.
  • Let sit at room temperature for 10 minutes before serving.
