These Greek tomato fritters, also known as tomatokeftedes, are a traditional recipe from Santorini. Made with ripe fresh tomatoes, onion, and plenty of herbs, they are light, crispy, and bursting with Mediterranean flavor.

The secret to their texture is a simple batter of flour and soda water, which makes them fluffy inside and golden outside. Perfect as a meze, appetizer, or vegetarian main, these fritters are best enjoyed warm with tzatziki or yogurt dip.

Ingredients

  • 330 ml 1 1/3 cup Soda Water (carbonated soft drink)

  • 350 g 2 3/4 cup All-purpose Flour

  • 50 g 3 tbsp Olive oil

  • 500 g 1 lb Ripe Tomatoes, finely chopped

  • 1 1 Onion, grated

  • 1/2 tsp 1/2 tsp Thyme

  • Fresh Parsley & Mint, chopped

  • 1/2 tbsp 1/2 tbsp Salt

  • 1/2 tbsp 1/2 tbsp Black Pepper

  • Paprika, to taste

  • Sunflower oil, for frying

How to make Greek Tomatokeftedes

  • In a mixing bowl, combine soda water and flour to form a smooth batter.
  • Add olive oil, salt, and pepper. Mix well.
  • Stir in grated onion, chopped tomatoes, paprika, parsley, mint, and thyme. Mix until you have a thick, homogeneous mixture.
  • Heat sunflower oil in a frying pan.
  • Using a spoon, drop small portions of the mixture into the hot oil.
  • Fry the tomato fritters on both sides until golden and crispy.
  • Remove and place on paper towels to drain excess oil.
  • Serve warm with tzatziki or yogurt.
