An easy Greek shepherd’s pie made in one bowl, without phyllo dough. Loaded with feta, herbs, yogurt, and vegetables, this rustic baked pie is perfect for family meals.

Ingredients

  • 230 g 1 cup Olive Oil

  • 1 tbsp 1 tbsp Vinegar

  • 400 g 2 cup Greek Yogurt

  • 375 g 1 1/2 cup Milk

  • 4 4 Eggs

  • 1 tbsp 1 tbsp Smoked Paprika

  • 3 tsp 3 tsp Baking Powder

  • Salt and Pepper

  • 200 g 1 3/4 cup Hard Cheese, grated

  • 350 g 2 1/3 cup Feta Cheese, crumbled

  • 600 g 4 cup All-purpose Flour

  • 1/2 bunch 1/2 bunch Fresh Parsley, finely chopped

  • 1 pinch 1 pinch Thyme or Oregano

  • 20 20 Fresh Mint Leaves, finely chopped (or 1 tsp dried)

  • 3 3 Bell Peppers, finely diced

  • 10 10 Cherry Tomatoes (or 1 large Tomato), diced

  • Sesame Seeds, for topping

How to make Greek Shepherd’s Pie

  • In a large bowl, combine yogurt and milk.
  • Beat the eggs separately and add them to the bowl.
  • Add the olive oil (reserving about one-fifth for later) and mix well.
  • Add smoked paprika, thyme, salt, pepper, parsley, and mint. Stir to combine.
  • Add the bell peppers and tomatoes. Mix gently.
  • Add the feta and grated hard cheese and stir lightly.
  • In a separate bowl, mix flour with baking powder.
  • Add vinegar to the wet mixture, then gradually add the flour mixture, stirring gently just until incorporated.
  • Grease a 40 cm / 16-inch round baking pan and pour in the batter. Smooth with a spatula.
  • Drizzle the reserved olive oil over the top and sprinkle with sesame seeds.
  • Bake in a preheated oven at 170°C / 340°F (static heat) for about 70 minutes, until golden and fully set.
