Ingredients

  • 500 g 1.1 lb Shrimp, peeled

  • 100 g 7 tbsp Olive Oil

  • 1 1 Large Onion, finely chopped

  • 3 3 Garlic Cloves, finely chopped

  • 2 2 Red Sweet Peppers, diced

  • 3 3 Peppers (green, orange and yellow), diced

  • 1/2 bunch 1/2 bunch Parsley, finely chopped

  • 1 tbsp 1 tbsp Smoked Paprika

  • Salt, to taste

  • Black Pepper, to taste

  • 1 cup 1 cup Medium Orzo

  • 3 cups 3 cup Shrimp broth, made from shrimp heads

  • 200 g 1 cup Tomato Juice

How to make Greek Shrimp Orzo

  • Clean the shrimp and place the heads in a pot to prepare the broth. For detailed instructions on how to clean shrimp, see the step-by-step explanation in the video.
  • Add water to the pot with the shrimp heads and let it simmer to create the broth.
  • Place a frying pan over heat and add enough olive oil to cover the bottom.
  • Add the onion and sauté for 3–4 minutes.
  • Add the peppers and sauté well.
  • Add the garlic and sauté it as well.
  • Add the parsley, season with salt and pepper, add the smoked paprika and the orzo, and mix well.
  • Add the tomato juice and the shrimp broth, mix, and let simmer for 5 minutes.
  • Add the shrimp and let them simmer for 5 minutes as well.
  • Remove the shrimp and continue simmering the dish until the orzo is cooked.
  • Remove from the heat and let the dish rest for 5 minutes so the flavors combine.
  • Serve on a platter and garnish with the shrimp on top.
