  • 2 packages 2 packages Tea Biscuits (Petit Beurre style)

  • 10 10 Digestive bscuits

  • 1 liter 4 1/4 cup Non-dairy Whipping Cream

  • 200 g 7 Milk Chocolate Couverture

  • 200 g 1 cup Milk (for dipping the biscuits)

  • 2 tbsp 2 tbsp Sunflower Oil

How to make the Icebox Cake

  • Prepare the Cream
  • Pour the non-dairy whipping cream into a large bowl.
  • Using a mixer, beat until it becomes thick and creamy.
  • Transfer approximately one-quarter of the cream to another bowl and set aside.
  • Continue beating the remaining cream until stiff whipped cream forms.
  • Reserve a small amount of whipped cream in a separate bowl for decorating later.
  • Place both bowls in the refrigerator while preparing the remaining ingredients.
  • Prepare the Cookie Layer
  • Place the digestive biscuits into a food processor.
  • Pulse briefly until crushed into small pieces, but not into fine crumbs.
  • Add the crushed digestive biscuits to the reserved bowl of cream.
  • Fold together gently until combined.
  • Assemble the First Layer
  • Dip the tea biscuits briefly into milk.
  • Arrange them in a 25 x 35 cm (10 x 14 inch) baking dish to completely cover the bottom.
  • Spread the cream and crushed digestive biscuit mixture evenly over the biscuits.
  • Add a second layer of milk-dipped tea biscuits on top.
  • Prepare the Chocolate Cream
  • Break the milk chocolate into small pieces and place it in a bowl.
  • Add the sunflower oil.
