Kimolos Ladenia is a traditional Greek flatbread topped with onions, tomatoes, and a generous drizzle of olive oil. Baked to perfection, this simple yet flavorful bread makes an excellent snack or light meal.

Ingredients

  • 350 g 11.8 Water (lukewarm)

  • 10 g 0.4 oz Dry Yeast

  • 600 g 21.2 oz All-Purpose Flour

  • 20 g 0.7 oz Sugar

  • 10 g 0.4 oz Salt

  • 50 g 1.8 oz Olive Oil

  • 20 20 Cherry Tomatoes, cut in half

  • 2 2 Onions, chopped

  • Pepper

  • Thyme

  • Olive Oil to sprinkle

How to make Greek Ladenia

  • In a bowl, add flour, sugar, salt, yeast, a pinch of pepper, and a bit of thyme (or oregano), and mix briefly.
  • Add lukewarm water, olive oil, and knead for 2-3 minutes.
  • Sprinkle some olive oil on the dough, cover it, and let it rise until it doubles in size.
  • Drizzle olive oil on a baking tray and transfer the dough into the tray.
  • Spread the dough evenly by hand.
  • Top the dough with onions and cherry tomatoes (or regular tomatoes), season with salt, pepper, thyme, and drizzle with more olive oil.
  • Let the ladenia rise for another 10-15 minutes.
  • Preheat the oven to 200°C (390°F)and bake for 45-50 minutes until golden.
