Ingredients

  • For the Cake
  • 600 g Self Raising Flour

  • 270 g Milk

  • 250 g Margarine

  • 5 Eggs

  • 1 pinch Salt

  • 350 g Sugar

  • 2 Vanillins

  • 150 g Chocolate Sprinkles

  • For the Coating
  • 300 g White Chocolate

  • 20 g Seed Oil

Recipe directions

  • For the Vasilopita Cake
  • In a bowl, add the sugar, margarine and mix well.
  • Add the vanillins, a pinch of salt, the eggs, and mix.
  • Next, add the milk and stir a little. Gradually add the flour while stirring.
  • Add the chocolate sprinkles and mix with a spatula.
  • Grease a 28 cm (11 in) round baking dish with margarine and dust it with flour. Pour the mixture into the dish and spread it with a spatula.
  • Preheat the oven to 150 C (300 F) on convection and bake for 60 to 70 minutes.
  • Once the Vasilopita is baked, let it cool and then unmold it onto a platter.
  • Let it cool completely before proceeding with the coating.
  • For the Coating
  • In a bowl, add the white chocolate broken into small pieces and seed oil.
  • Cover the bowl with cling film and put it in the microwave until the chocolate melts.
  • Pour the melted chocolate over the Vasilopita Cake. Spread evenly with a spatula.
  • Optionally decorate the Vasilopita cake with numbers made of fondant to resemble a clock.
