A soft and moist vegan apple cake made with fresh apples, orange juice, cinnamon, and vegetable oil.

Ingredients

  • For the Apples
  • 4 4 Large Apples

  • Juice of 1 Lemon

  • 1 liter 4 1/4 cup Water

  • 50 g 1/4 cup Granulated Sugar

  • Ground Cinnamon

  • For the Cake Batter
  • 500 g 2 cup Fresh Orange Juice

  • 230 g 1 cup Granulated Sugar

  • 240 g 1 cup Margarine or Corn Oil

  • 2 2 Vanilla Capsules

  • 1 pinch 1 pinch Salt

  • 1 tbsp 1 tbsp Ground Cinnamon

  • 600 g 5 cup Self-rising Flour

  • 1 tsp 1 tsp Baking Powder

  • Alternative Flour Option
  • 600 g 5 cup All-purpose Flour

  • 25 g 2 tbsp Baking Powder

  • For Finishing
  • Powdered Sugar

  • Ground Cinnamon

Recipe directions

  • Prepare the Apples
  • Add the water and lemon juice to a large bowl.
  • Peel and core the apples.
  • Cut the apples into thin slices.
  • Transfer the apple slices to the bowl with the lemon water to prevent them from browning.
  • Prepare the Cake Batter
  • Add the granulated sugar and orange juice to a separate large mixing bowl.
  • Stir until the sugar begins to dissolve.
  • Add the vanilla, salt, and plant-based margarine or corn oil.
  • Mix until evenly combined.
  • Add the sifted self-rising flour and baking powder.
  • Stir thoroughly until a smooth, thick batter forms.
  • Add the Apples
  • Drain the apple slices thoroughly.
  • Add the 50 g sugar and ground cinnamon to the apples.
  • Toss until the slices are evenly coated.
  • Add the apples to the cake batter.
  • Mix gently until the apple slices are evenly distributed.
  • Prepare the Pan
  • Grease a 25 × 37 cm (10 × 14½-inch) baking pan with plant-based margarine or corn oil.
  • Transfer the batter to the prepared pan.
  • Spread it evenly across the pan.
  • Bake
  • Bake in a preheated oven at 355°F (180°C) using conventional top and bottom heat.
  • Bake for approximately 60 minutes, or until the cake is golden and fully baked in the center.
  • Insert a skewer or toothpick into an area without a large apple slice. It should come out clean or with a few moist crumbs.
  • Cool and Serve
  • Let the apple cake cool completely in the pan.
  • Dust the surface with powdered sugar and ground cinnamon.
  • Cut into squares and serve.
