These oven-baked pork bites with eggplant are a hearty Mediterranean-style meal made with tender pork shoulder, fried eggplant, peppers, onions, and fresh tomato. Everything finishes cooking together in the oven until the vegetables become soft and the tomato sauce turns rich and flavorful.
Why Boil the Pork Before Baking?
Pork shoulder benefits from sufficient cooking time to become tender.
Instead of relying entirely on the 45 minutes in the oven, the pork is first boiled until softened. This means the final oven stage is primarily about bringing the flavors together and reducing the tomato sauce rather than trying to tenderize raw pork from scratch.
After boiling, make sure the meat is drained thoroughly.
You can put it directly into the baking dish or briefly sauté it first. Sautéing is optional, but it gives the exterior of the pork additional browning and a deeper roasted flavor.
Why Fry the Eggplant First?
Eggplant behaves like a sponge when cooked with oil and sauce. Frying it before assembling the dish gives it color and starts softening the flesh.
During the final bake, the eggplant absorbs some of the tomato sauce and flavors from the pork and vegetables.
The goal is for the pieces to become soft and almost creamy inside while still retaining enough structure that they don’t completely disappear into the sauce.
Drain the Eggplant Well
After salting and rinsing the eggplant, drain it thoroughly before putting it into hot oil.
Excess surface water can cause the oil to splatter and can interfere with browning.
What to Serve with Pork and Eggplant
Because this is already a substantial dish containing meat and vegetables, it doesn’t require an elaborate side.
Fresh crusty bread is particularly useful for the tomato sauce. You could also serve it with rice, potatoes, or a simple green salad.
Allowing the finished dish to rest for several minutes before serving also gives the sauce time to settle.
