Tender pork bites with eggplant baked in the oven with fresh tomatoes, peppers, onion, and herbs. A hearty Mediterranean-style pork dish with a rich tomato sauce and melt-in-the-mouth eggplant.

Ingredients

  • 1 kg 1 Pork Shoulder, cut into bite-sized pieces

  • 5 5 Medium Eggplants, cut into chunks

  • 1 1 Large Onion, chopped

  • 2 2 Peppers, chopped

  • 3 3 Ripe Tomatoes, grated or blened

  • Fresh Parsley, chopped, to taste

  • Salt and Black Pepper, to taste

  • Dried Oregano, to taste

  • Sweet Paprika, to taste

  • Olive Oil, as needed for frying and sautéing

Recipe directions

  • Prepare the Pork
  • Cut the pork shoulder into small, bite-sized pieces.
  • Place the pork in a pot, cover with water, and boil until the meat becomes tender.
  • Once cooked, drain thoroughly and set aside.
  • Prepare the Eggplant
  • Cut the eggplants into small pieces.
  • Season them with salt and leave them aside for a short time to release some of their moisture.
  • Rinse the eggplant and drain it very thoroughly.
  • Heat olive oil in a frying pan.
  • Fry the eggplant until lightly browned.
  • Remove from the pan and transfer directly to a baking dish.
  • Prepare the Vegetables
  • Chop the onion and peppers.
  • Sauté them until they soften slightly.
  • Transfer them to the baking dish with the eggplant.
  • For additional color and flavor, you can optionally sauté the boiled pork bites briefly in the same pan.
  • Add the pork to the baking dish.
  • Prepare the Fresh Tomato Sauce
  • Grate or blend the ripe tomatoes.
  • Add chopped parsley, salt, black pepper, sweet paprika, and oregano.
  • Pour the fresh tomato mixture over the pork and vegetables.
  • Gently mix everything in the baking dish so that the ingredients and seasonings are evenly distributed.
  • Do not add water. The fresh tomatoes and vegetables will release enough liquid as the dish cooks.
  • Bake
  • Bake for approximately 45 minutes, until the tomato sauce has reduced and thickened and the eggplant is tender and well cooked.
  • Remove from the oven and let the dish rest for a few minutes before serving.

Why Boil the Pork Before Baking?

Pork shoulder benefits from sufficient cooking time to become tender.

Instead of relying entirely on the 45 minutes in the oven, the pork is first boiled until softened. This means the final oven stage is primarily about bringing the flavors together and reducing the tomato sauce rather than trying to tenderize raw pork from scratch.

After boiling, make sure the meat is drained thoroughly.

You can put it directly into the baking dish or briefly sauté it first. Sautéing is optional, but it gives the exterior of the pork additional browning and a deeper roasted flavor.

Why Fry the Eggplant First?

Eggplant behaves like a sponge when cooked with oil and sauce. Frying it before assembling the dish gives it color and starts softening the flesh.

During the final bake, the eggplant absorbs some of the tomato sauce and flavors from the pork and vegetables.

The goal is for the pieces to become soft and almost creamy inside while still retaining enough structure that they don’t completely disappear into the sauce.

Drain the Eggplant Well

After salting and rinsing the eggplant, drain it thoroughly before putting it into hot oil.

Excess surface water can cause the oil to splatter and can interfere with browning.

What to Serve with Pork and Eggplant

Because this is already a substantial dish containing meat and vegetables, it doesn’t require an elaborate side.

Fresh crusty bread is particularly useful for the tomato sauce. You could also serve it with rice, potatoes, or a simple green salad.

Allowing the finished dish to rest for several minutes before serving also gives the sauce time to settle.
