Homemade Bounty-style chocolate coconut bars made with a creamy coconut filling and coated in smooth milk chocolate. Easy, delicious, and perfect for coconut lovers.

Ingredients

  • Coconut Filling
  • 100 g 1/3 cup Water

  • 200 g 1 cup Sugar

  • 1 pinch 1 pinch Salt

  • 1 tsp 1 tsp Glucose Syrup (optional)

  • 50 g 3 1/2 tbsp Butter

  • 200 g 1 cup Heavy Cream

  • 200 g 2 1/3 cup Shredded Coconut

  • 2 2 Vanillin Capsules

  • Chocolate Coating
  • 400 g 14 oz Milk Chocolate Couverture

  • 20 g 1 1/2 tbsp Vegetable Oil

Recipe directions

  • Prepare the Coconut Filling
  • In a saucepan, combine the water, sugar, salt, and glucose syrup.
  • Place over medium heat and stir until the mixture comes to a boil.
  • Reduce the heat and continue stirring for approximately 10 minutes.
  • Add the butter and vanilla.
  • Stir until the butter melts completely and becomes incorporated.
  • Add the heavy cream and bring the mixture back to a gentle boil.
  • Gradually add the shredded coconut while stirring continuously.
  • Continue cooking until the mixture absorbs most of the moisture and becomes thick and firm.
  • Transfer the mixture to a tray and spread it out slightly.
  • Allow it to cool until comfortable to handle.
  • Shape the Coconut Bars
  • Take small portions of the mixture and shape them into bars or bite-sized candies.
  • Place them on a parchment-lined tray.
  • Refrigerate until thoroughly chilled and firm.
  • Prepare the Chocolate Coating
  • Place the milk chocolate in a bowl and break it into small pieces.
  • Add the vegetable oil.
  • Melt the chocolate using a microwave or a double boiler.
  • Stir until smooth and glossy.
  • Coat the Candies
  • Dip each coconut bar into the melted chocolate.
  • Place on parchment paper.
  • Allow the chocolate coating to set completely before serving.
