Ingredients

  • 400 g 14 oz Cod, cleaned and desalted

  • 330 ml 1 1/3 cup Soda Water

  • 340 g 2 3/4 cup Self-rising Flour

  • 6 sprigs 6 sprigs Fresh Dill, finely chopped

  • 5-6 5-6 Green Onions, finely chopped

  • 1/2 bunch 1/2 bunch Parsley, finely chopped

  • 50 g 3 1/2 tbsp Olive Oil

  • Salt, Pepper, Smoked Paprika to taste

  • Sunflower oil for frying

How to make Cod Fritter

  • Fillet the cod and dry it well with paper towels.
  • Remove the skin and cut the fish into very small pieces using a knife or by hand.
  • In a bowl, mix the flour with the soda water until a smooth batter forms.
  • Add the black pepper, smoked paprika, chopped dill, green onions, and parsley.
  • Add a small amount of salt and mix well.
  • Add the cod pieces into the batter and mix so they are well coated.
  • Add the olive oil to the mixture and mix again.
  • Heat plenty of sunflower oil in a pan over medium-high heat.
  • Using a tablespoon, drop spoonfuls of the mixture into the oil.
  • Fry the fritters until they turn golden on both sides.
  • Transfer them to a tray lined with paper towels to drain excess oil.
