Healthy apple oat cake, made without sugar or flour using ground oats, fresh apples, and dark chocolate.

Ingredients

  • 300 g 3 cup Rolled Oats

  • 3 3 Apples (about 650 g / 1.4 lb)

  • 1 1 Apple, diced

  • 5 5 Large Eggs

  • 100 g 3 1/2 oz Dark Chocolate, chopped

  • 1 pinch 1 pinch Salt

  • 1 tbsp 1 Baking Powder

  • 1 tsp 1 tsp Vanilla Extract

Recipe directions

  • Make the Oat Flour
  • Add the rolled oats to a food processor.
  • Blend until they resemble a fine flour.
  • Transfer the oat flour to a large mixing bowl.
  • Prepare the Apples
  • Peel and core 3 apples.
  • To prevent browning, place the apple pieces in a bowl of water with the juice of ½ lemon.
  • Transfer the apples to a food processor and blend until smooth.
  • Add the apple purée to the oat flour and mix.
  • Prepare the Batter
  • In a separate bowl, whisk the eggs.
  • Add the salt and vanilla extract.
  • Pour the egg mixture into the oat and apple mixture.
  • Fold everything together using a spatula until combined.
  • Stir in the baking powder.
  • Add the diced apple.
  • Fold in the chopped dark chocolate.
  • Bake
  • Line a 24 cm (9½-inch) round cake pan with parchment paper.
  • Pour the batter into the pan and spread it evenly.
  • Bake in a preheated oven at 300°F (150°C) fan oven, or 320°F (160°C) conventional oven.
  • Bake for 45–50 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool completely before removing it from the pan.
  • If desired, dust lightly with a powdered sweetener such as stevia before serving.
