  • 4 kg Pork, skin-on

  • 6 kg Potatoes

  • Salt, Pepper

  • 3 cloves Garlic

  • For the marinade
  • Juice of 1 lemon

  • 2 tbsp Mustard

  • 50 g Olive oil

  • 1 tsp Thyme

  • 3 cloves Garlic

  • 1 tsp Paprika

  • 1500 ml Water

Recipe directions

  • Wash the pork meat and dry it well.
  • Use a blowtorch to singe any remaining hairs on the meat.
  • Cut 2-3 cloves of garlic into slices, make small incisions in various parts of the meat (not the skin), and insert the garlic slices.
  • Place the meat in a baking tray with the skin side down. Season the meat with salt and pepper, and add a little hot water to the tray, just enough to cover the bottom.
  • Preheat the oven to 180 degrees Celsius (355 F), place the tray low in the oven, and bake for one hour.
  • For the Marinade and Potatoes
  • In a bowl, combine the juice of one lemon, 3-4 finely chopped garlic cloves, 2 tablespoons of mustard, olive oil, a little warm water, salt, pepper, paprika, and thyme, and mix.
  • Peel the potatoes, cut them into thick pieces, and add them to the bowl. Mix the potatoes with the marinade.
  • After the meat has been baking for one hour, add the potatoes to the tray around the meat and add a little more water to the tray.
  • Season the meat a little more with salt and pepper.
  • Place the tray back in the lower part of the oven and bake at 180 degrees Celsius (355 F) for another one and a half hours. Then, turn the meat over and bake for an additional half hour.
