These fluffy vegan cookies are soft like clouds and incredibly easy to make without a mixer or piping bag. Filled with jam or chocolate, theyโ€™re the perfect homemade sweet treat.

Ingredients

  • For the Cookies
  • 400 g 400 Self-rising Flour

  • 80 g 80 Orange Juice

  • 130 g 130 Sugar

  • 250 g 250 Plant-based butter

  • 2 2 Vanillin capsules (1 tsp vanilla extract)

  • For the Filling
  • Jam of your choice

  • For the Chocolate
  • 100 g 100 Dark Chocolate

  • 2-3 tbsp 2-3 Vegetable Oil

How to make the Cookies

  • In a bowl, add all the ingredients and knead until you have a soft and pliable dough that doesnโ€™t stick much to your hands.
  • Cover the dough and place it in the refrigerator for 15โ€“20 minutes to rest.
  • Preheat the oven to 180ยฐC / 350ยฐF (conventional heat).
  • Take small pieces of dough, shape them into balls, and place them on a baking tray lined with parchment paper.
  • Cover with another sheet of parchment paper and press to form discs about 1 cm (โ…“ inch) thick.
  • Using a spoon or fork, create small decorative patterns around the edges. Press the center with your finger to create a small indentation.
  • Bake for about 15 minutes until lightly golden.
  • At the 10-minute mark, remove the tray and gently press the center again to maintain space for the filling.
  • Let the cookies cool completely, then fill with jam or melted chocolate.
