A quick and easy skillet phyllo pizza made with shredded phyllo pastry, melted cheese, and bacon, ham, or turkey. A simple no-oven snack with just 10 minutes of stovetop cooking.

Ingredients

  • 250 g 8.8 oz Phyllo Pastry

  • 200 g 7 oz Shredded Melting Cheese

  • 10 10 Slices Bacon, ham or turkey

  • 50 g 3 1/2 tbsp Olive Oil

  • 2 2 Large Eggs

  • 240 ml 1 cup Milk

  • Salt and Black Pepper, to taste

  • 1 tsp 1 tsp Smoked Paprika

Recipe directions

  • Take the phyllo sheets and cut them into strips approximately 1 cm / ⅜ inch wide.
  • Gently separate the strips so they don’t remain stuck together.
  • Lightly drizzle a little olive oil into a 28 cm / 11-inch nonstick skillet.
  • Arrange approximately half of the phyllo strips across the bottom, distributing them evenly to cover the surface.
  • Set the remaining phyllo aside.
  • Cut the bacon, ham, or turkey into small pieces.
  • Spread the pieces evenly over the phyllo.
  • Add a layer of shredded melting cheese, reserving some for later.
  • Arrange the remaining phyllo strips over the cheese and bacon, covering the filling.
  • In a bowl, combine the eggs, milk, remaining olive oil, salt, black pepper, and smoked paprika.
  • Whisk until well combined.
  • Using a spoon, distribute the egg-and-milk mixture evenly over the phyllo.
  • Make sure the liquid reaches different areas of the pan so the pastry cooks evenly.
  • Place the skillet over low heat and cover it with a lid.
  • Cook for approximately 5 minutes.
  • Use a spatula to gently loosen the edges of the phyllo pizza from the sides of the pan.
  • Sprinkle the reserved shredded cheese evenly over the surface.
  • Place a large plate over the skillet and carefully invert the phyllo pizza onto the plate.
  • Slide it back into the skillet so the uncooked side faces downward.
  • Cover the skillet again and cook over low heat for another 5 minutes, or until the phyllo is golden, the cheese has melted, and the egg mixture is fully cooked.
  • Transfer the skillet phyllo pizza to a serving plate.
  • Cut into slices and serve warm.
  • Alternative Oven Method
  • You can also prepare this recipe in an oven-safe pan or baking dish. Bake at 200°C / 390°F, without flipping until the egg mixture is fully set and the phyllo is golden, checking regularly.

Can I make phyllo pizza without an oven?

Yes. This recipe is designed to cook in a covered skillet on the stovetop.

Does this recipe use traditional pizza dough?

No. It uses thin strips of ready-made phyllo pastry instead of yeast-based pizza dough.

Can I use mozzarella?

Yes. Mozzarella melts well and works particularly well in this recipe.

Can I replace bacon with ham or turkey?

Yes. The original recipe allows bacon, ham, or turkey slices.

Can I cook the entire recipe in 5 minutes?

The original method specifies 5 minutes on each side, for approximately 10 minutes of stovetop cooking. Additional preparation time is needed.

Why is my phyllo pizza difficult to flip?

The filling may not have set sufficiently, or the phyllo may still be attached to the pan. Cook a little longer and loosen the edges before flipping.

Can I make it ahead of time?

Yes. You can cook it in advance, refrigerate it, and reheat it before serving.
