Ingredients

  • 300 g 1 1/4 cup Vegetable Oil

  • 400 g 2 cup Sugar + powdered sugar for dusting

  • 800 g 6 1/2 cup Self-Rising Flour

  • 1 tbsp 1 tbsp Ground Cinnamon

  • 1/2 tsp 1/2 tsp Ground Clove

  • 450 g 1 3/4 cup Orange Juice

  • Zest of 1-2 Oranges

  • 1/2 tsp 1/2 tsp Baking Soda

  • 200 g 1 1/4 cup Raisins

  • 1 pinch 1 pinch Salt

How to make the Cake

  • In a large bowl, mix the oil and sugar using a whisk.
  • Add a pinch of salt, clove, cinnamon, and orange zest and mix well.
  • Mix the orange juice with the baking soda and add it to the bowl while stirring.
  • In a separate bowl, lightly coat the raisins with flour and mix.
  • Gradually add the remaining flour to the wet mixture, stirring continuously.
  • Add the raisins and mix gently with a spatula.
  • Grease and flour a 30 cm (12-inch) round pan, pour in the batter, and spread evenly.
  • Smooth the edges slightly with a spatula to prevent uneven rising.
  • Bake in a preheated oven at 160°C / 320°F (fan) or 170°C / 340°F (conventional) for 45-50 minutes.
  • Let the cake cool completely before removing from the pan and dusting with powdered sugar.
