A refreshing no-bake apricot yogurt dessert. Light, creamy, and perfect for summer entertaining.

Ingredients

  • 225 g 8 oz Canned Apricot halves (1 small can)

  • 500 g 2 cup plain Greek Yogurt

  • 200 g 2/3 cup Sweetened Condensed Milk (1/2 can)

  • Juice of 1/2 Lemon

  • 30 ml 1 oz Brandy (optional)

  • 1/2 package 1/2 package Ladyfingers for individual dessert cups OR 1 full package Ladyfingers for a 25x35cm (10×14 in) baking dish

Recipe directions

  • Prepare the Yogurt Cream
  • Drain the apricot compote, reserving a small amount of the syrup.
  • In a large bowl, combine the Greek yogurt, sweetened condensed milk, a few tablespoons of the reserved apricot syrup, the lemon juice, and the optional Kahlúa or brandy.
  • Whisk until the mixture becomes smooth and creamy.
  • For Individual Dessert Glasses
  • Slice half of the apricots into thin slices and cut the remaining apricots into small pieces.
  • Break each ladyfinger into 4–5 pieces.
  • Assemble the glasses in the following order:
    Ladyfingers
    Yogurt cream
    Diced apricots
    Ladyfingers
    Yogurt cream
    Sliced apricots
  • For a Large Baking Dish
  • Slice all of the apricots into thin slices.
  • Arrange one layer of ladyfingers on the bottom of a 25 × 35 cm (10 × 14 inch) baking dish.
  • Spread the yogurt cream evenly over the ladyfingers.
  • Decorate the surface with the sliced apricots.
  • Cover with plastic wrap.
  • Refrigerate for 12–24 hours before serving.
