These Cypriot pork meatballs with potato are juicy, fluffy, and full of flavor. A traditional recipe with a crispy outside and tender interior.

Ingredients

  • 1 kg 2.2 lb Ground Pork

  • 500 g 1.1 lb Potatoes

  • 2 2 Large Onions, grated

  • 2 2 Eggs

  • 2-3 tbsp 2-3 Breadcrumbs

  • 1 tbsp 1 tbsp Dried Mint or 15-20 Fresh Mint Leave, finely chopped

  • 1/2 bunch 1/2 bunch Parsley, finely chopped

  • 3 tbsp 3 tbsp Olive Oil

  • 2 tbsp 2 tbsp Vinegar

  • Salt and Pepper, to taste

  • Olive Oil or Vegetable Oil, for frying

How to make Cypriot Meatballs

  • Peel and wash the potatoes.
  • Grate them using the coarse side of a grater and place them in a sieve over a bowl.
  • Press with a spatula to remove excess moisture.
  • In a large bowl, add the ground pork.
  • Add the grated potatoes, onions, eggs, vinegar, olive oil, salt, pepper, mint, parsley, and breadcrumbs.
  • Mix well until fully combined.
  • Cover with plastic wrap and refrigerate for 30 minutes.
  • Shape into meatballs, about 60 g each.
  • Heat oil in a pan.
  • Fry the meatballs over medium heat on both sides until golden, about 2 minutes per side.
  • Transfer to a plate lined with paper towels.
