This Is Why Your Cod Finally Turns Out Perfect

Most people try to make battered cod at home and end up with heavy, soggy coating or fish that falls apart.

This recipe fixes that completely.

The combination of soda water and baking powder creates a batter that expands instantly in hot oil, forming a light, crispy shell that seals in moisture. The result? Cod that stays juicy inside while the outside becomes perfectly golden.

Once you try it like this, itโ€™s hard to go back.

The Secret to Ultra Crispy Batter (Most People Miss This)

Hereโ€™s what makes the difference:

  • The batter must be smooth but not too thick
  • The oil must be properly heated before frying
  • The cod must be well dried and floured first

That last step is critical. Coating the fish in flour before dipping it into the batter helps everything stick properly and prevents the coating from sliding off.

How to Get That Perfect Golden Crunch Every Time

If you want that deep golden, crispy texture, follow these key tips:

  • Fry in small batches
  • Donโ€™t overcrowd the pan
  • Keep the heat steady
  • Let the cod drain on paper towels

And one more detail that makes a difference: a few drops of lemon in the batter help create a lighter texture and subtle freshness.

Why This Dish Is a Greek Tradition

In Greece, battered salt cod is strongly associated with March 25th, one of the most important national holidays. Itโ€™s traditionally served with skordalia (garlic dip) and brings families together around the table.

But you donโ€™t need a special occasion to enjoy itโ€”this dish is perfect anytime you want a crispy, satisfying seafood meal.
