Easy homemade pizzeria-style pizza with a soft, airy dough, tomato sauce, melted cheese, and bacon or turkey. Prepare the dough the same day or refrigerate it overnight.

Ingredients

  • For the Pizza Dough
  • 450 g 3 1/4 cup All-purpose Flour

  • 375 g 1 1/2 cup Lukewarm Water for same-day preparation or room temperature for overnight dough

  • 7 g 2 1/4 tsp Dry Yeast

  • 6 g 1 tsp Sugar

  • 50 g 3 tbsp Olive Oil

  • 6 g 1 tsp Salt

  • 10 g 2 tsp Vinegar

  • For the Tomato Sauce
  • 250 g 1 cup Tomato Passata or Tomato Sauce

  • Salt and Black Pepper, to taste

  • Dried Thyme or Oregano, to taste

  • For the Topping and Pan
  • 50 g 3 tbsp Olive Oil

  • 400 g 14 oz Grated Melting Cheese

  • 150 g 5 1/4 oz Bacon or turkey

Recipe directions

  • Prepare the Dough
  • Add the sugar, yeast, and water to a large mixing bowl.
  • Stir until the yeast dissolves.
  • Add the olive oil and vinegar.
  • Stir again.
  • Add the flour and salt.
  • Mix thoroughly until a very soft and sticky dough forms.
  • Cover the bowl with plastic wrap.
  • Let the dough rise at room temperature for 30 minutes.
  • Fold the Dough
  • Dip a spatula in water to prevent sticking.
  • Use the wet spatula to lift and fold the dough over itself several times.
  • Let the dough rest for 10 minutes.
  • Repeat the folding process once more.
  • Overnight Dough Option
  • To prepare the dough the day before, use room-temperature water instead of lukewarm water.
  • After mixing the dough, cover the bowl well and place it in the refrigerator.
  • The following day, remove the dough from the refrigerator and allow it to lose some of its chill before folding, transferring it to the pan, and continuing with the recipe.
  • Prepare the Pan
  • Line a 25 × 37 cm (10 × 14½-inch) baking pan with parchment paper.
  • Transfer the dough to the prepared pan.
  • Drizzle the surface with some of the additional olive oil.
  • Use oiled hands to spread the dough evenly across the entire pan.
  • Prepare the Sauce
  • Add the tomato passata or sauce to a bowl.
  • Season with salt, black pepper, and thyme or oregano.
  • Stir well.
  • Spread the sauce evenly over the dough.
  • Add the Toppings
  • Sprinkle part of the grated cheese over the sauce.
  • Add part of the bacon, turkey, or other deli meat.
  • Add another layer of grated cheese.
  • Finish with the remaining bacon or turkey.
  • Alternatively, use any pizza toppings you prefer.
  • Bake
  • Place the oven rack in a low position.
  • Bake in a preheated oven at 400°F (200°C) using conventional top and bottom heat.
  • Bake for approximately 50 minutes, until the crust is cooked through, the base is golden, and the cheese is melted and lightly browned.
  • Let the pizza rest for a few minutes before slicing.
