This peinirli recipe brings the flavors of a traditional Greek pastry to your kitchen. A soft dough filled with cheese, bacon, and ham, baked to golden perfection for a delicious, satisfying snack.

Ingredients

  • For the Dough
  • 700 g 24.7 oz All-Purpose Flour

  • 350 g 12.3 oz Water (lukewarm)

  • 16 g 0.6 oz Dry Yeast

  • 10 g 0.4 oz Sugar

  • 8 g 0.3 oz Salt

  • 50 g 1.8 oz Olive Oil

  • For the Filling
  • 400 g 14 oz Melting Cheese

  • 150 g 5.3 oz Bacon (chopped)

  • 200 g 7 oz Ham (chopped)

  • 50 g 1.8 oz Butter

Recipe directions

  • For the Dough
  • In a bowl, add the flour, yeast, salt, and sugar, and mix.
  • Pour in the olive oil and water, and knead for 4-5 minutes.
  • Score a cross on the dough, cover the bowl with a towel, and let the dough rise for about 30 minutes.
  • Transfer the dough to a floured surface and knead it briefly to release the air.
  • Divide the dough into 8 equal portions.
  • For the Filling
  • In a bowl, add the grated cheese, bacon, and ham (cut into small pieces), and mix them together lightly.
  • To Assemble
  • Cut the butter into very small pieces.
  • Roll out each piece of dough to about half a centimeter thick, forming an oval shape.
  • Add a little filling and 2-3 small pieces of butter.
  • Seal the dough well by pinching the two edges together. Turn the peinirli upside down and place it on parchment paper.
  • Score the dough to create a small opening.
  • Let the peinirli rise for 20 minutes.
  • Spray the dough with a little lukewarm water, being careful not to get water on the filling.
  • Preheat the oven to 200°C (392°F) and bake for 20-25 minutes until golden brown.
  • Once out of the oven, brush the peinirli with a little butter.
