Ingredients

  • For the Syrup
  • 900 g 31.7 oz Sugar

  • 200 g 7 oz Orange juice

  • 700 g 24.7 oz Water

  • 1 tbsp 1 tbsp Glucose

  • Zest of one orange

  • For the Orange Cake
  • 6 6 Eggs

  • 200 g 7 oz Sugar

  • 14 g 0.5 oz Baking powder

  • 1 pinch 1 pinch Salt

  • Zest of 3 oranges

  • 250 g 8.8 oz Margarine (or butter)

  • 250 g 8.8 oz Fine semolina

  • 100 g 3.5 oz Orange juice

  • 200 g 7 oz All purpose flour

How to make Greek Orange Cake

  • For the Syrup
  • Add the sugar, orange juice, water, glucose in a pot and stir. Add the orange zest and place the pot over heat. Bring to a boil, then simmer for 6 minutes.
  • Set the syrup aside to cool.
  • For the Orange Cake
  • Add the eggs, sugar in a mixer’s bowl and beat for a few minutes.
  • Add the baking powder, orange zest, a pinch of salt and mix.
  • Add the margarine (or butter) at room temperature and mix.
  • Add the fine semolina and mix.
  • Add the orange juice, the flour and mix well.
  • Τransfer the mixture to a buttered baking dish and spread it evenly using a spatula.
  • Preheat the oven to 340 F (170 C) and bake for 50 minutes.
  • To Assemble
  • Pour the cold syrup over the hot cake.
  • Let it sit for a few minutes for the syrup to be absorbed by the cake.

  • For the syrup, you can use juice of half a lemon instead of the glucose.
