What Is Greek Rizogalo?

The word rizogalo comes from the Greek words for rice (rizi) and milk (gala).

It is a traditional Greek milk-based dessert made by cooking rice until tender and combining it with milk and sugar.

Many versions are flavored with vanilla, while others may include lemon zest or different aromatic ingredients.

Cinnamon is the most familiar topping.

Although rice pudding is prepared in many countries, Greek rizogalo is particularly associated with its simple ingredients and creamy texture.

Why Use Carolina Rice?

Carolina rice is a medium-grain rice commonly used in Greek cooking.

It contains enough starch to help create a creamy consistency while maintaining a pleasant texture after cooking.

For this recipe, the rice is first simmered in water for approximately 20 minutes.

This allows the grains to soften before the milk and remaining ingredients are added.

If Carolina rice is unavailable, another medium-grain white rice is a suitable alternative.

Avoid using parboiled rice if you want the same soft, creamy texture.

The Secret to a Velvety Rice Pudding

The key to this particular recipe is the use of 80 g cornstarch.

Cornstarch thickens the milk as it heats, creating a smooth vanilla cream around the cooked rice.

Because the recipe contains a relatively small quantity of rice compared with the amount of milk, the finished dessert has a more custard-like consistency than some traditional rice puddings.

For the smoothest result, dissolve the cornstarch in cold milk before adding it to the saucepan.

This helps prevent lumps and allows it to distribute evenly.

Once the mixture begins to thicken, continue stirring to prevent it from sticking to the bottom of the saucepan.

Why Is Butter Added at the End?

The butter is added after the rice pudding has thickened and the heat has been turned off.

As it melts into the hot mixture, it adds richness and contributes to a smoother mouthfeel.

Adding it at the end also makes it easier to incorporate evenly without prolonged cooking.

The recipe uses 50 g butter, enough to enrich the pudding without overpowering the vanilla and milk flavors.

How to Prevent Lumps

Cornstarch thickens quickly when heated, especially when added to hot liquids.

For this reason, continuous stirring is important.

A whisk works particularly well when the milk and cornstarch are first combined.

Once the rice pudding begins to thicken, a spatula or wooden spoon can help you reach the bottom and corners of the saucepan.

Keep the heat moderate and avoid leaving the mixture unattended.

How Thick Should Greek Rice Pudding Be?

The pudding should be creamy and thick enough to coat a spoon, but still soft enough to pour into serving bowls.

It will continue to firm up as it cools, especially after refrigeration.

Because this recipe contains cornstarch, it will set more firmly than a rice pudding thickened only by rice starch.

For the best texture, remove it from the heat once it has thickened properly rather than continuing to cook it unnecessarily.

Warm or Cold Rice Pudding?

Greek rizogalo can be served either warm or cold.

When served warm, it has a softer, creamier texture.

After chilling, the pudding becomes firmer and the vanilla flavor remains pronounced.

Both versions are delicious, so the choice depends on personal preference.

For a traditional presentation, divide the pudding into individual bowls and sprinkle each serving with ground cinnamon.

How to Store Homemade Rice Pudding

Because rizogalo contains milk, allow it to cool briefly and refrigerate it promptly.

Store in covered containers in the refrigerator and consume within 3–4 days.

Avoid leaving rice pudding at room temperature for extended periods because cooked rice and dairy products require proper refrigeration.

For the best quality, rice pudding is not generally ideal for freezing, as the texture can become grainy or watery after thawing.
