  • 250 g 9 oz Plain Biscuits (like Petit Beurre)

  • 200 g 7 oz Chocolate-covered Biscuits

  • 300 g 10.5 oz Milk Chocolate Couverture

  • 300 g 1 1/3 cup Butter or Margarine

  • 30 g 3 tbsp Cocoa Powder

  • 50 g 1/4 cup Sugar

  • 70 g 5 tbsp Brandy or Cognac

  • 200 g 1 cup Heavy Cream

  • 200 g 1 cup Milk (for dipping biscuits)

How to make the Chocolate Icebox Cake

  • In a saucepan over low heat, melt the butter.
  • Add chopped milk chocolate and heavy cream. Stir gently until smooth. Remove from heat.
  • Mix in cognac (or milk), cocoa powder, and sugar until fully incorporated.
  • Transfer the mixture to a bowl.
  • Line a baking pan with plastic wrap, covering the bottom and sides.
  • Dip chocolate biscuits in milk and place them in the pan.
  • Spread a layer of chocolate mixture over the biscuits.
  • Add a layer of plain biscuits dipped in milk.
  • Repeat, alternating layers of biscuits and chocolate, finishing with a biscuit layer.
  • Cover with plastic wrap and freeze for at least 2 hours.
  • Slice and serve chilled.
