Ingredients

  • 1 kg 2.2 lb Strong Flour (type 550)

  • 530 g 2 1/4 cup Lukewarm Water

  • 50 g 1.75 oz Fresh Yeast

  • 50 g 3.5 tbsp Olive Oil

  • 40 g 3 tbsp Sugar

  • 20 g 1 tbsp Salt

How to make Greek Soft Bread

  • In the mixer bowl, add sugar, lukewarm water, and yeast. Stir slightly.
  • Reserve 50 g of the flour, then add the remaining flour on top to cover the mixture. Let stand for 15 minutes to activate the yeast.
  • Add salt and olive oil, then knead on low speed for 5 minutes (or by hand for about 7 minutes).
  • Transfer the dough to a work surface and knead by hand for 30 seconds.
  • Return to the bowl, score a cross on top, cover with a towel, and let rise for 30 minutes.
  • Sift the reserved 50 g of flour over the dough, transfer it to the counter, and knead lightly to deflate.
  • Divide the dough into two equal pieces.
  • Shape each into a loaf by rolling gently with your hands.
  • Place both loaves on a parchment-lined baking tray and shape them nicely.
  • Cover and let rise for 30 minutes.
  • Spray the loaves with a little water and sprinkle with sesame seeds.
  • Using a razor or sharp knife, score the top.
  • Bake in a preheated oven at 200°C (390°F) for about 50 minutes, until beautifully golden and baked through.
