Ingredients

  • 1 kg All purpose flour

  • 350 g Sheep butter

  • 250 g Cow butter

  • 130 g Sugar

  • 1 pinch Salt

  • 250 g Roasted almonds

  • 2 Vanillins

  • 1/2 tsp Ground mastic

  • 1 tsp Baking soda

  • 1 tsp Baker’s ammonia

  • 50 g Ouzo or Water

  • 400 g Icing sugar

  • Rosewater

Recipe directions

  • In the bowl of the mixer, add both sheep and cow butter, sugar, and a pinch of salt. Beat the mixture for 10 minutes.
  • Add the baker’s ammonia, baking soda, ground mastic, vanillin, and either ouzo or water to the mixture. Beat for 2-3 minutes.
  • Add the all-purpose flour and mix with the beater until it forms a dough. Then, continue mixing while gradually adding the almonds.
  • Divide the dough into balls of 30 g each.
  • Place them on a baking sheet lined with parchment paper.
  • Preheat the oven to 170 C (340 F) and bake for 35 minutes.
  • Let the cookies cool for 4 to 5 hours.
  • Spray the cookies with rosewater.
  • Sprinkle the cookies with icing sugar.
