Pakotinia are crispy cornmeal sticks filled with cheese, fried until golden and served hot. These savory snacks are easy to prepare and perfect for dipping into sauces or enjoying on their own. They are a delicious combination of cornmeal’s crunch and cheese’s melt-in-your-mouth goodness.

Ingredients

  • 500 g 17.6 oz Water

  • 200 g 7 oz Water (Hot)

  • 100 g 3.5 oz Butter

  • 400 g 14 oz Corn Flour

  • 10 g 0.4 oz Salt

  • 250 g 8.8 oz Melting Cheese (grated)

  • 150 g 5.3 oz Corn Starch

  • Seed oil for frying

Recipe directions

  • Place a saucepan with 500g of water on the stove.
  • Add the butter and salt, stirring until the butter melts.
  • Once the water starts to boil, add the cornmeal, reduce the heat, and stir for 2 minutes.
  • Transfer the mixture to a bowl, add the 200g of hot water, and stir well.
  • Add the grated cheese and cornstarch, mixing thoroughly. Knead for about 1 minute.
  • Take a portion of the dough and place it on your work surface.
  • Cover the remaining dough in the bowl with plastic wrap to keep it warm.
  • Use two sticks as a guide for thickness and roll out the dough. Trim the edges to make them straight, then cut the dough into sticks.
  • Heat vegetable oil in a pan and fry the sticks until they are golden brown.
