Ingredients

  • For the Phyllo Dough
  • 500 g All purpose flour

  • Juice of half a lemon

  • 1/2 tsp Salt

  • 50 g Olive oil

  • 220 g Water, lukewarm

  • For the Filling
  • 1200 g Pumpkin, grated

  • 1 Onion, finely chopped

  • 3 Spring onions, chopped

  • 70 g Olive oil

  • 1/2 bunch Parsley, finely chopped

  • 2 tbsp Dill, finely chopped

  • 400 g Feta cheese

  • Salt & Pepper

Recipe directions

  • For the Dough
  • In a bowl, combine flour, lemon juice, lukewarm water, olive oil, and salt. Mix well until a dough forms.
  • Cover the dough and let it rest while preparing the filling.
  • For the Filling
  • Place a frying pan over heat and add olive oil.
  • Add the grated onion, the chopped spring onions, and sauté.
  • Add the grated pumpkin and continue to sauté until slightly softened. Then season with salt and pepper.
  • Three minutes before removing the filling from the heat, add the chopped dill and parsley. Mix well.
  • Transfer the filling to a bowl.
  • To Assemble
  • Divide the dough into 5 equal parts. Roll out the first piece as thinly as possible and lay it in a 30 cm (12 inches) diameter baking tray, first sprinkled with olive oil.
  • Sprinkle the phyllo with olive oil, roll out the second piece of dough, and place it in the tray.
  • Preheat the oven to 180 Celsius (355 F) and bake for about an hour.
