Ingredients

  • For th Cake
  • 250 g 8.8 oz Cow’s Butter

  • 500 g 17.6 oz Milk

  • 400 g 14 oz Sugar

  • 30 g 1 oz Baking Powder

  • 650 g 23 oz All-Purpose Flour

  • 5 5 Egg Whites

  • 5 5 Egg Yolks

  • 3 3 Vanillins

  • Zest of 1 Orange

  • 25 g 0.9 oz Cognac

  • 150 g 5.3 oz Chocolate Sprinkles

  • For the Topping
  • 350 g 12.3 oz White Chocolate Couverture

  • 2 tbsp 1 oz Sunflower Oil

How to make the Vasilopita

  • For the Cake
  • In a bowl, add the egg whites and salt, and whisk with a mixer until stiff peaks form to make a meringue.
  • Gradually add 3 tablespoons of sugar while whisking. Set aside.
  • In a separate bowl, combine room-temperature butter, egg yolks, and the remaining sugar. Beat with a mixer for 2–3 minutes.
  • Add the brandy, orange zest, and vanilla, and beat for another 1–2 minutes.
  • Mix the baking powder with the flour.
  • While mixing with the mixer, alternately add the milk and the flour-baking powder mixture into the wet ingredients.
  • Beat well with the mixer until combined.
  • Fold in the chocolate sprinkles with a spatula.
  • Gradually fold the meringue into the batter, using gentle, circular motions with a spatula.
  • Line a 30 cm diameter pan with parchment paper on both the bottom and sides.
  • Transfer the batter to the pan, spreading it evenly. Lightly tap the pan on the counter to remove any air bubbles.
  • Preheat the oven to 160°C (320°F) and bake on the lower heat setting for 65–75 minutes, depending on your oven’s strength.
  • For the Topping
  • In a bowl, add the white chocolate, broken into small pieces, and the vegetable oil.
  • Cover with cling wrap and melt in the microwave or over a double boiler until smooth.
  • Spread the melted chocolate over the cooled Vasilopita.
  • Let the chocolate set completely before decorating the cake.
