An easy crustless Greek cheese pie made without phyllo. Mixed in one bowl and baked until golden, this quick recipe is perfect for last-minute meals or snacks.

Ingredients

  • 3 3 Eggs

  • 250 g 1 cup Water

  • 250 g 1 cup Milk

  • 60 g 4 tbsp Olive oil

  • 1 tsp 1 tsp Smoked Paprika

  • 1 tsp 1 tsp Dried Thyme

  • 1/2 tsp 1/2 tsp Baking Powder

  • Salt & Pepper

  • 100 g 1/2 cup Butter

  • 450 g 3 cup All-purpose flour

  • 300-500 g 10-18 Feta cheese, crumbled

  • 200 g 7 oz Grated melting cheese (optional)

  • Sesame seeds, for topping

Recipe directions

  • Prepare the Batter
  • In a large bowl, whisk the eggs.
  • Add water, milk, olive oil, salt, pepper, smoked paprika, and thyme. Mix well.
  • In a separate bowl, combine flour and baking powder.
  • Gradually add the flour mixture to the wet ingredients, whisking until smooth.
  • Let the batter rest for 5–10 minutes.
  • Prepare the Pan & Assemble
  • Place butter slices evenly across the baking pan.
  • Put the pan in the oven for a few minutes until the butter melts.
  • Add the grated cheese to the batter and mix.
  • Remove the pan from the oven and pour in the batter, spreading evenly.
  • Crumble the feta over the entire surface.
  • Sprinkle with sesame seeds and a little black pepper.
  • Add a few extra butter pieces on top.
  • Bake
  • Bake in a preheated oven at 200°C / 400°F (top & bottom heat) for 40–45 minutes, until golden and crisp.
